Stille Nacht (Silent Night) is a prestige beer from De Dolle Brouwers brewed for Christmas. It has the highest density of any Belgian beer (27 degrees Pl). It has been boiling for many hours, brewed with pale malt with white candi sugar in the kettle. The Nugget hops gives an extra bitterness to balance the extreme sweetness due to the density. The taste triangle is completed with some acidity of the fermentation. It is a very interesting beer to age. We have samples of every bottling we have done so far and aging does not mean decreasing quality with this beer. Keep some samples at 10 degrees C and mark the year on the cap with an alcohol marker.ABV: 12.0%£6.50

Pintle is a pale ale brewed with wheat, oats and flaked barley in the grist to smooth out the body. Whirlpooled and dry hopped with Australian Cascade and Citra. Its restrained bitterness and dry finish help maintain Pintle's all day crushability.ABV: 4.3%£4.00

We love stout here at Wander Beyond big and small. For our next creation we've produced something we've never actually done before: a session strength oatmeal stout. Brewed with all the flavour you'd expect from a Wander Beyond stout without the high ABV. Nine different malts including a variety of chocolates and roasted malts, rye and oats for body, Wolfsbane is full bodied and rich stout with light roasty coffee and lush bitter chocolate carried by a creamy mouthfeel.ABV: 4.8%£5.35
A thirst quenching session beer, Sour Suzy mimics a classic German brewing technique (sour mashing) to impart a light, refreshing tartness. No hop bitterness & very low hop profile. Sour Suzy is not your typical session beer – rather it delivers something a bit more obscure and intriguing. It drinks as refreshingly as a glass of lemonade. This one is based on a pilot brew that went down a storm at our taproom. An imperial stout grain bill, mashed high for big body and lots of residual sugars, then paired with a low attenuating yeast. Our little mini series of beers have always proved to be insanely popular here at Polly’s. Whether it’s the individual staff-designed beers, or the Late Summer single hop pales, a long running theme always seems to go down a storm with our fans. When tossing up ideas for the next series to whirl into our brew plans, our owner Sean came up with the idea of “B Sides” – BIPA versions to run alongside re-brews of our most popular beers. Naturally, it felt the right thing to do to christen this series with the original Augment trio – second up to the plate is Spur! The scrappy middle child of the original trio; we’re absolutely vibing off how well the relatively low key but ultra high juice Citra, Simcoe and Azacca hop bill works when turned to the dark side.
