£7.50We take Pilsner malt from Germany and combine with three traditional hop varieties – Magnum, Perle and Hallertauer Mittelfruh – to produce a clean, unfiltered, Hop Bitter Lager Beer.

A style that is all about a mastery of balance and refreshment, we feel our Westie output is rapidly growing in reputation after nailing our New England game. Wanting to replicate the beers that inspired us to brew in the first place, Shape Curator is front loaded with a massive 20kg whirlpool addition of classic C hop Chinook on the hot side to impart all manner of robust grapefruit, piney and resinous bitter notes, before an ultra low addition of Columbus and Chinook on the cold side brings a little candied orange sweetness to the party for balance.

£4.00It can’t be said enough that we love ourselves a bit of nostalgia here at Polly’s. Back in the days when things were simple; everything was bright eyed and bushy tailed, and pandemics were a thing we only knew about in history books. We were looking through the in-house Spotify account at our most played of 2019, and there was a definitive soundtrack which followed the brewery around, specifically Arron when he used to lace up his steel toecaps and run beers out in the van – LCD Soundsystem. Wanting to pay homage to these New York City heavyweights, a gap in our brew plans was filled by our raven-haired Head of Sales literally saying “Shut up and play the hits!”. Citra, Simcoe, Bru-1 and Idaho 7 are the big crowd pleasers here, with a sneaky album track Cashmere thrown in for good measure.
