Lindemans - Oude Gueuze Cuvée René 2021 (375 ml bottle)
The refreshingly tart Oude Gueuze Cuvée René is one of the most famous Lambics ever! This spontaneously fermented beer is a blend of 1/3 old (3 years) Lambic and 2/3 young (1 year) Lambic. These were fermented in large oak barrels. The beer is then bottled and aged for another six months. During this time, bottle fermentation takes place, which not only gives the Geuze its carbonation, but rounds out the flavor beautifully. The Oude Gueuze Cuvée René convinces with its balanced play of acidity, yeast notes, hints of barrel aging and a light fruit reminiscent of citrus and apple. A great companion to many dishes or as an ingredient itself, for example, for rudiments of sauces. This beer is perfect for cellaring for several years!

Just before we closed up the brewery for our annual shutdown over Christmas, some idle chatter revealed that several members of staff are keen sloe gin makers/drinkers, and the holidays were the time of year they’d crack open their efforts. Never one to miss an opportunity, we wanted to create a beer that works well with the tartness of sloe berries, but at the same time remains mega drinkable, as is the Polly’s way. Step forward Sweet Treasure; a sour beer with our Scottish magician Lally at the wheel, utilising both early picked sloe berries and late picked sloe berries – the early picked berries bringing a lip-smacking tartness to the party, whilst the more mature later picked fruit brings very subtle, sweet almond notes to finish things off.ABV: 4.6%£5.25

This New England style pale ale is brewed with oats for a full bodied and soft base beer, dry-hopped with two hefty charges of Citra, Idaho 7 and Talus hops. RIDER, 4.5% Pale Ale, is our take on a classic hazy pale ale brewed in collaboration with one of the world’s most prolific producers of guitar amps, HIWATT.The brief for this beer was it must be ideal for sinking whilst in the pub or taking in some great bands whilst shouting at your mates. It pours a gorgeous hazy pale straw colour, with an oily and silky mouthfeel.The body is sweet and prominent all rounded out with the lightest of crisp bitter finishes. This big clean and classic IPA is a real delicious treat. Charged full of Mosaic for those punchy citrusy and piney notes, Simcoe for the ripe stone fruit flavours and Ekuanot for that zesty, pithy. This beautiful beast is bursting to the brim with some of our absolute favourite hops. Citra, Mosaic, Azacca and Ekuanot for that epic dank and piney hit. This Mountain style IPA is a balance between tropical hops with a refreshing crisp finish. Possibly the standout beer from our individual staff designed DDH Pale series of 2020; Murmurations makes a welcome return with a new and improved recipe, headed up by our second ever employee at the brewery, our very own Scott. Featuring a technique known as “hop bursting”; Scott’s objective is to purposely multi-layer the whirlpool hops to accentuate his dry hop bill of Mosaic, Simcoe, Azacca and Enigma. Gradually adding a small amount of Mosaic at 100 degrees, before dropping the whirlpool down to 87 degrees and adding his main whirlpool addition of Simcoe, the result is that each individual varietal is distinguishable throughout – creating, what we feel, is possibly our most crushable pale yet.ABV: 4.9%£4.95
