A Fleeting Sound. So we’ve taken our first plunge into using Spectrum hops in the overwhelmingly popular Spectrum range released in April, where do we go next? Pure, unadulterated, “let your hair loose” beer, that’s where! We noticed that the TIPA from our Spectrum launch was, mostly, the favourite out of the four, so we’ve gone huge on this style with our biggest dry hop bill to date; utilizing 20kg each of pellet Citra and Mosaic, before supercharging again with 2kg of Spectrum Citra and Mosaic. In layman’s terms, a triple dry-hop on the cold side. The result is an absolutely intense flavour bomb of pink grapefruit, gooseberry, and lychee from the Citra, with a hearty show of tangerine, mango, and that distinctive berry medley from the Mosaic. Absolutely insane.ABV: 11.0%£8.00
Oude Geuze Boon is a monument of taste with an alcohol content of 7%. It’s a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25,000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze. After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Simply subtract 20 years from the “best before” date!ABV: 7.0%£4.35
This full-bodied and decadent Imperial Stout is a liquid expression of a dessert favourite the cherry trifle. Layers of sour cherry, vanilla and custard flavours sit atop a robust and well-rounded Imperial Stout base. The resulting beer is satisfyingly sweet, creamy and best enjoyed during the colder months.ABV: 10.0%£4.50
We’ve recently invested in some new equipment that allows us to dial in our water like never before, and who better than Polly’s to help us develop the perfect profile for this soft, juicy IPA. Hop-wise it’s some newer varieties we’re both enjoying right now – Talus, Sabro & Idaho 7 – plus a little bit of Citra for good measure.ABV: 7.2%£6.60
Crashing into summer like a zesty sunburst, comes Ida.ABV: 3.8%£4.25
