The laws protecting the brewing of kolsch are as strict as the German Purity Law of 1516. Kolsch beer can only be brewed within the city of Cologne. As the best-known kolsch brewery, Gaffel’s flavour is derived from an ale yeast that is "lagered" (or aged) in cold cellars. Gaffel is pale, faintly fruity with a crisp, hop finish.

£4.40The refreshingly tart Oude Gueuze Cuvée René is one of the most famous Lambics ever! This spontaneously fermented beer is a blend of 1/3 old (3 years) Lambic and 2/3 young (1 year) Lambic. These were fermented in large oak barrels. The beer is then bottled and aged for another six months. During this time, bottle fermentation takes place, which not only gives the Geuze its carbonation, but rounds out the flavor beautifully. The Oude Gueuze Cuvée René convinces with its balanced play of acidity, yeast notes, hints of barrel aging and a light fruit reminiscent of citrus and apple. A great companion to many dishes or as an ingredient itself, for example, for rudiments of sauces. This beer is perfect for cellaring for several years!ABV: 6.0%

£2.80Possibly the standout beer from our individual staff designed DDH Pale series of 2020; Murmurations makes a welcome return with a new and improved recipe, headed up by our second ever employee at the brewery, our very own Scott. Featuring a technique known as “hop bursting”; Scott’s objective is to purposely multi-layer the whirlpool hops to accentuate his dry hop bill of Mosaic, Simcoe, Azacca and Enigma. Gradually adding a small amount of Mosaic at 100 degrees, before dropping the whirlpool down to 87 degrees and adding his main whirlpool addition of Simcoe, the result is that each individual varietal is distinguishable throughout – creating, what we feel, is possibly our most crushable pale yet.ABV: 4.9%

Brewed with all the flavour you'd expect from a Wander Beyond stout without the high ABV. Nine different malts including a variety of chocolates and roasted malts, rye and oats for body, Wolfsbane is full bodied and rich stout with light roasty coffee and lush bitter chocolate carried by a creamy mouthfeel.ABV: 4.8%
