The flavors are rounded off with a balanced mixture of Rothaus Pils and Rothaus Märzen Export. Just as with our beers, we only use carefully selected ingredients. For example, we only use natural flavors and the pure brewing water that we used at Rothaus. £5.00“Rejoice!” strips back all of the regalia – no adjuncts, no barrel ageing, no collaborations, just a laser focus on the bare bones of an Imperial Stout. The sum total of everything we’ve learned about the style by tinkering with the recipe over its previous four iterations, and set us up for the final ascent.Focusing on the essence of an Imperial Stout, the malt bill, we’ve introduced Black Malt to the grist, imbuing the silky smooth, treacle-toffee, milk-chocolate base with a gnarly dose of raisin, bitter, tannic dark chocolate, and the warmth of toasted tobacco.
£8.80A Hazy IPA with cryo citra, Nelson Sauvin and Motueka. Fresh, fruity and full bodied with notes of bright gooseberry, white grape and fresh lime.6.3% ABV.
£6.10The original German wheat beer. In 1872, Georg Schneider bought the brewing rights to wheat beer from King Ludwig II of Bavaria, making Schneider Original one of the first publicly available wheat beers in the world. Amber-coloured with nuances of ripe bananas, clove, nutmeg and nuts, this weissbier pairs well with pork and root vegetables.ABV: 5.4%
£4.10A thirst quenching session beer, Sour Suzy mimics a classic German brewing technique (sour mashing) to impart a light, refreshing tartness. No hop bitterness & very low hop profile. Sour Suzy is not your typical session beer – rather it delivers something a bit more obscure and intriguing. It drinks as refreshingly as a glass of lemonade. The grain bill includes a healthy portion of wheat, while citrusy hops lend bright notes to the aroma.ABV: 4.0%
£2.40A hoppy lager that uses a unique hop variety M-UNIQUE, a collaboration between hop grower and brewery.6.6% ABV.
£4.60Our little mini series of beers have always proved to be insanely popular here at Polly’s. Whether it’s the individual staff-designed beers, or the Late Summer single hop pales, a long running theme always seems to go down a storm with our fans. When tossing up ideas for the next series to whirl into our brew plans, our owner Sean came up with the idea of “B Sides” – BIPA versions to run alongside re-brews of our most popular beers. Naturally, it felt the right thing to do to christen this series with the original Augment trio – second up to the plate is Spur! The scrappy middle child of the original trio; we’re absolutely vibing off how well the relatively low key but ultra high juice Citra, Simcoe and Azacca hop bill works when turned to the dark side. An in-house favourite and for good reason – the series rolls on!ABV: 7.2%
£5.25Barnum Brown - American Brown Ale - Our take on the American Brown Ale has a soft biscuit base with a gentle roast character and some pine, citrus and berry from the all American hop bill. £5.40The laws protecting the brewing of kolsch are as strict as the German Purity Law of 1516. Kolsch beer can only be brewed within the city of Cologne. As the best-known kolsch brewery, Gaffel’s flavour is derived from an ale yeast that is "lagered" (or aged) in cold cellars. Gaffel is pale, faintly fruity with a crisp, hop finish.ABV: 4.8%

£16.00Possibly the standout beer from our individual staff designed DDH Pale series of 2020; Murmurations makes a welcome return with a new and improved recipe, headed up by our second ever employee at the brewery, our very own Scott. Featuring a technique known as “hop bursting”; Scott’s objective is to purposely multi-layer the whirlpool hops to accentuate his dry hop bill of Mosaic, Simcoe, Azacca and Enigma. Gradually adding a small amount of Mosaic at 100 degrees, before dropping the whirlpool down to 87 degrees and adding his main whirlpool addition of Simcoe, the result is that each individual varietal is distinguishable throughout – creating, what we feel, is possibly our most crushable pale yet.ABV: 4.9%
£4.956.8% abv. Beer & friendship strikes again! This time we've gone international. Long Haul is a NEIPA turned right up to 11 in collaboration with very dear and long-time pals One Drop from Sydney. It is the culmination of intricate process, avant-garde technique, ultra-premium ingredients, and a collective 14-year journey into beer. With the playbook in the bin, we've cooked up a combination of YCH Cryo pop and Sabro Cryo to assualt the whirlpool, we’ve open-top fermented a thick base of Multi-Stacked Oats and Chit with our in-house L3 Yeast Blend before loading an unholy amount of fresh Nelson Sauvain, Mosaic and Nectaron hop oil into our dry-hop. At over 22g/L, and employing a multi-staged hop burst approach, expect a stubborn long haul of hop character that stays with your one long after liquid gold has laced the lips. We’ve loved everything about this project and we hope you enjoy it with as much love as we’ve had making it.
