Polly's Brew Co. - Finding Dark Magic (440 ml can)
Our stout game is rumbling away in the background, building up traction slowly but surely and winning a solid fanbase of drinkers who love when we take a walk from the well beaten track of pale and hoppy. Having seen out the end of 2020 with two ends of the scale in an Imperial and more sessionable stout, our brewers wanted to embrace the less obnoxious cousin of the Imperial variety, and the result is Finding Dark Magic; a no-frills, straight up export stout. Letting the malt do the talking here, we’ve loaded this beer to the nines with Cara Special III, Black, Chocolate, Crystal and Oats to create a stout with bold coffee, dark chocolate, and roasted notes, before a whisper of bitterness checks in from a 10kg addition of Centennial in the whirlpool.

“Rejoice!” strips back all of the regalia – no adjuncts, no barrel ageing, no collaborations, just a laser focus on the bare bones of an Imperial Stout. The sum total of everything we’ve learned about the style by tinkering with the recipe over its previous four iterations, and set us up for the final ascent.Focusing on the essence of an Imperial Stout, the malt bill, we’ve introduced Black Malt to the grist, imbuing the silky smooth, treacle-toffee, milk-chocolate base with a gnarly dose of raisin, bitter, tannic dark chocolate, and the warmth of toasted tobacco.£8.80

Cast Iron Billy is a luxurious Imperial Brown Stout that harkens back to Victorian London’s brewing golden age. We’re extremely proud of our city’s rich brewing history and so for this beer we’ve drawn on an original Barclay Perkins recipe from 1832. Velvety smooth with chocolate, caramel and dark berry flavours alongside delicate hints of vanilla - you’d be forgiven for thinking Cast Iron Billy sits well below its 10.5% ABV. Close your eyes, take a sip and imagine walking down the smog filled streets of industrial revolution era Southwark... ...or maybe just enjoy your beer.ABV: 10.5%£5.95
